{Muffin Monday} Scrumptious Coconut-Pinapple

I think I am making a move toward coconut.
It seems to be finding a way into more and more recipes, even water these days.
Not sure exactly how I feel about this not really "nut".  
We haven't had a lot of opportunity to hang together yet...
I imagine that coconut prefers to spend it's time lounging and basking in the sun.
At least that is what I think of when I smell coconut....it's a good thought and I am ready for some lounging in the sun...so like I said I am making a move toward coconut and these beauties will definitely help me get there!
