NO Sugar, NO Butter....Oh My!

I have been reading a lot  obsessively about Paleo, Gluten Free, Vegan, Clean Eating. My head is spinning with new revelations, new ideas, and quite honestly a little fear.  For the most part I buy organic where it counts: produce, dairy, meats.  I have drastically cut back on my family eating processed foods.  Let's be honest though I still have a box of vanilla wafers or cheese crackers in my cupboard occasionally always.  Let me state my family has no issues with Gluten, or any food allergies, and we have no desire to be totally Vegan, Gluten Free, Sugar Free etc. But I see value in all of these theories and lifestyle eating choices.  So I have decided to experiment a little and combine them...if at all possible...maybe you will try it out to and like it? Wheat Banana Chocolate Chip Muffins {No Sugar, No Butter}

-2 cups Whole Wheat Pastry Flour
-1 egg
-2 mashed Bananas
-1 cup applesauce  * This ingredient is used in place of sugar
-1/4 cup coconut oil ( I used Extra Virgin) * This ingredient is used in place of butter
- 1 tsp. baking soda
- 1 tsp. salt
-dash of cinnamon
-1 tsp vanilla
-1/2 cup chocolate chips

Combine flour, baking soda, and salt in a mixing bowl set aside. I another bowl mashup bananas, add applesauce, cinnamon, and vanilla.  Add to flour mixture along with 1 egg, and coconut oil (melt before adding if solid kind).  Mix with wooden spoon. Add chocolate chips last.  Spoon into muffin tins. Bake at 350* for 20 minutes or so.

{Theme Party} Beauty Bar

For the table center piece I spray painted cardboard letters of our name CROWS with black glitter paint and used a black table cloth for the table.
  Well Hellloooo! I could start this post with a whole laundry list of excuses as to why I haven't posted a single thing in 2012, but I think I will just stick with getting you this great party idea!  The women in my husbands family have created a sorority of sorts.  We take turns hosting get-togethers that are not focused on weddings, babies, or holidays.  We meet without the "guys", and talk girl talk.  It's amazing to have such a great female support system and be related to them all! We have a hierarchy order, and themes for each party. The latest one I hosted.  The them was Crow Beauty Bar.  Yes, we call ourselves the CROWS, it works for our family! 


For this event we had the ladies dig through their bathrooms for unused samples of things they have gotten in makeup purchases, etc.  They brought them to the party and deposited them in the appropriate containers.  We also said if they wanted to bring nail polish they weren't in love with to swap that was good too.

Containers were provided for perfume samples, hair, make-up, body, face, etc.  I purchased nail files, and individual nail polish remover packets for everyone as well.  These were put in containers at the bar.  I found these cute tag templates online and printed them out, and tied them on containers with a pink ribbon.  




For containers I used all sorts of short and round vases, and mason jars! They worked perfect and I already had them on hand.  




I made up brown shopping bags for everyone, so that when they went "shopping" at the beauty bar they had a place to keep their new samples and items from the beauty exchange.




On top of all the fun samples that everyone took home, I had these little "Keep Calm and Crow on" signs made and framed for a party favor! It was a great night and we had lots of fun! It was super easy and very inexpensive!

{Help a Momma Out} Making my life easier!

Well it has been a crazy September, and I am all about making my life tasks as easy as possible right now!
So this week I wanted to share with you what I have been focusing on to "Help a Momma Out".  Since going back to teaching this year my kids, my hubby, and me have all had a bunch of adjustments to make.

Re-Usable Snack Bags
I know that many of you crafty mommas could whip these up in a heartbeat, but I just don't have that kind of time anymore, so if your like me I think these two sites have the best ones to purchase and for a good price.  I like that both sites offer a product that can machine washed or even thrown in the dishwasher! I love not having to buy plastic bags, and the biggest testament is my new Kindergartner LOVES them!

Have you seen it?! {Organization issue}

With school just around the corner I thought it would be fun to post my top 3 things I am loving right now to help me get a move on Organizing for the school year.  With me going back to teaching this fall and my oldest starting Kindergarten as well, it will be a busy house this next year for SugarFoot Momma! 


1) I just ordered this Teacher's Planner from Erin Condren...I just LOVE her stuff and she has such cool stuff for teachers and really anyone! If your looking for a gift for a teacher or a friend you should really check her out.  With her current promo code I was able to save $10! (See bottom of post for code)

2) I know I will have to be way more organized at menu planning this next year...it's my weakest area.  I could live off PB&J but my family sadly cannot! This awesome printable menu planner is free over at The Project Girl.  She has lots of other organizing printables as well.

3) I don't really have a number three this week but I do have a recipe I tried and would like to share .. Chicken Lettuce wraps from Good Life Eats...they were delicious.  The only change I made was that I did not buy ground chicken I just cut up some fresh chicken tender size cuts super small after they were marinated,  worked great! Mmmm good mini pot pies

I've been lazy...
yet
I've been busy...
Is that entirely possibly to be lazy and busy at the same time? Not sure, but that is what my life has been this month.  I just got back from a big'ole Texas family vacation, it was a hoot!  I heart Texas, everything is bigger and better as they say.  Oh and the food!!! The food is sooo good...my sole is full of BBQ and ice-tea a plenty! Which is why I have been at a loss lately on what to fix for dinner.  Sometimes I just feel like we have eaten it all.  Do you ever feel that way?  Like nothing sounds good?  I have been that way since returning from my trip, and I realized exactly what my family needed to get out of our BBQ, Baked Beans, ice-cream coma....Comfort Food!! Sometimes you just need comfort food...you know what I'm talking about.  Mashed Potatoes, Baked Chicken, Mac N'Cheese, Soup, Meatloaf....the list could go on forever.  Everyone has their favorite and mine is Chicken Pot Pie! I know it's summer and pretty much 90 degrees everywhere...trust me when I say I flinch at the idea of turning on my oven on these days.   Sometimes though you just gotta have it!  So here is my version of Mini-Chicken Pot Pies....add a mixed greens salad and dig in! They freeze great too!

SugarFoot's Mini Chicken Pot Pies

Ingredients
-Small Ramekins
-Pre-made Pie Crust such as Pillsbury or Homemade if you have time :)
-3 to 4 cooked chicken breast ( I just steam mine in microwave with a little chicken stock)
-1 bag frozen mixed veggies 
-1 can Cream of Chicken Soup or Cream of Mushroom (I use the Healthy Request kind from Campbells)
- 1/2 small onion diced
-1/2 cup of milk
- Salt and Pepper to taste

Steps
1) Remove pie dough from fridge and set out on counter
2) Dice cooked chicken breast
3) Saute diced onion in a small amount of Olive Oil
4) Add frozen veggies to saute pan with onion, saute till veggies are no longer frozen but not soft.
5) Combine chicken veggies, soup mix, and milk in a pot on stove over med heat. Add Salt and Pepper
6) Heat mixture until slightly boiling, then remove from heat.
7) Next roll out pie dough a little thinner, about 1/4 inch thick.  This can be decided by how thick you like your crust.
8) Set ramekin in center and using a knife cut out a circle around the ramekin about an inch or so bigger so you will have enough to overlap over sides.
9) Line ramekins with butter then scoop filling into them.
10) Next lay cut circle of pie dough over top and fold edges under and tuck inside.  Make sure to prick with fork to allow for venting.  
11)Bake at 375* or whatever pie dough instructions say for about 20 min.
